It sounds like five of the twelve apostles gathered with Jesus within days of His baptism (light cleaveth unto light) and that the marriage at Cana followed almost immediately after they came to follow Him so although He said that His hour was not yet come, He showed them a miracle such that they might be assured because He had said “come and see.”
While the Savior knew that His hour was not yet come He also knew that in a short time, at Passover, He would begin His public ministry. Apparently there were many who were ready to follow Christ immediately at that first Passover but He knew that most of them had no root in them yet to sustain them so He did nothing to gather and organize them at that time.
